Earl grey superfood pudding

On a journey to eat more #wholefoodsplantbased so here's my Earl Grey Superfood Pudding!! Packed with flavour, antioxidants, fibers, proteins and complex carbs ๐Ÿฅฐ Super easy to assemble either the night before or a few hours before enjoying:

  • 1 tablespoon chia seeds

  • 1 tablespoon hemp hearts

  • 2 tablespoons ground flax seeds

  • 1/4 teaspoon each of cinnamon and cardamom

  • 1/2 tablespoon of slivered almonds

  • 1/2 cup of brewed Earl Grey tea (mainly water with a splash of almond milk)

  • 1/2 cup of frozen berries, stewed (I get a lot of questions on what this means - basically put them in a non-stick pan and defrost until tender)

While the tea is brewing, assemble and mix together all of the dry ingredients - once tea is brewed to your desired strength, mix in with all the dry ingredients making sure to get everything well incorporated. This is usually when I start stewing the berries (in the same saucepan to reduce washing) and then pour them on top, seal the container and pop it in the fridge for a yummy treat later!
