My go-to macro bowl 🌿 I love eating my biggest meal at lunch but making something entirely from scratch is a little too time-consuming so I prep everything in the morning and cook it up when I'm ready to eat.
» base: spinach, quinoa, lentils/legumes (this varies between lentils, kidney beans, chickpeas, and other types of beans)
» tofu: extra firm tofu cut into blocks, seasoned with turmeric and black pepper, pan fried in olive oil
» vegetables: broccoli, zucchini, mushrooms, asparagus, brussel sprouts (this varies based on seasonality/what's on sale 😜), sautéed in olive oil
» topped with: everything but the bagel seasoning
I know so many of you ask how I can eat the same things everyday, but when it's this good (in both taste and health), it's so easy and now it's become such a habit. Being healthy/eating right doesn't have to be this daunting task - just start simple with whatever you can!
