The *best* salad recipe

There's nothing worse than eating a big lunch and getting postprandial somnolence (aka a food coma 🤓) - I basically lose all my after lunch productivity when this happens.

I switched over to eating a big salad 🥗 for lunch around October and haven't looked back! They're super customizable but here's a good base you can't go wrong with 😊

  • chopped spinach and arugula

  • shredded purple cabbage

  • cubed cucumber and bell peppers

  • crispy tofu (I pan fry with about a teaspoon of olive oil, the key for crispy is to buy extra firm)

  • beans (I love the 6 bean medley but chickpeas and fava beans work well too)

  • pumpkin seeds and sunflower seeds

  • hemp hearts

  • hummus (I take 2 tablespoons and water it down to make it more ~saucy~)

Mix it all together and enjoy this divine deliciousness!
