Zucchini oats 🥣

Can't get enough of these zucchini oats 🥰 once I find a recipe I like, I keep making it until I get tired of it (rarely) or I stumble upon something new!

For about two years I was obsessed with overnight oats but this warm, naturally sweet and flavourful dish is quick to make and keeps you feeling full for hours (literally). And before you roll your eyes at the zucchini, I promise that you can’t taste it at all!

Original recipe from Annie Jaffrey but I've made a few of my own modifications after making this for the 7th time!

You’ll need:

  • 1 cup plant milk (I use @milkdamia macadmia milk)

  • 1/4 cup rolled oats

  • half a zucchini, shredded

  • 1 ripe banana cut into small pieces

  • 1/4 teaspoon of cinnamon

  • 1/4 teaspoon of cardamom

Add all of these items to a saucepan, bring to a boil and then reduce heat to let simmer (don't forget to stir occasionally)

Then I like to add in these superfoods to get a more thicker consistency as well as beautiful purple colour:

  • 2 tablespoons hemp hearts

  • 1 tablespoon chia seeds

  • 2 tablespoons flax seeds

  • 1/2 cup frozen wild blueberries

While this is cooking, I chop up about 5 strawberries into small pieces as well as a handful of walnuts. Transfer the oatmeal to a bowl of your choice, add the strawberries and walnuts, and enjoy 👅 Let me know if you end up making them ☺️
